pecan pie bites


1 c. brown sugar
1/2 c. flour
2 eggs
2/3 c. melted butter
1 c. chopped pecans
mix and pour into greased mini muffin tins-- 2/3 full.
makes about 40.
bake at 350 for 12-15 minutes.
SO easy and SO yum.



veggie lasagna


-boil and prepare lasagna noodles.

-saute lots of veggies in olive oil. (i used a head of broccoli and cauliflower, 1 and 1/2 tomatoes, an onion, and 3 stalks of celery. (can you tell i was just trying to clean out the fridge?) next time i will chop the veggies up more, they were a bit too big which makes for cute pictures but not easy eating.)

-pour 1/2 c. flour into pan and gradually whisk in 3 c. milk until well blended. bring to boil over medium heat. cook 5 minutes or until thick, stirring constantly. stir in 1/2 c. cheese, salt and pepper, cook for 1 minute, stirring constantly. remove from heat and stir in spinach.

-mix big thing (lovely measurements, huh?) of cottage cheese with a beaten egg.

layer everything in 9x13. top with the white sauce. bake at 375 for 25-30. add cheese on top. bake another 5.

  1. Enjoyed looking around here and will give some of these a try. I, too, love chicken and sweets and love to cook and bake, but have come around to using only real butter, vanilla and whipped cream and wow what a yummy difference!
