meri's chicken casserole
we had this at a church get-together. when i saw this dish that meri brought-- i thought i'd taste it just to be nice (it didn't look good to me). but it was delish! my fave that night. and it's a hit even with my kids!
boil a can of water chestnuts, a bag of frozen broccoli, and 2 chopped up celery stalks. drain that off and add it to some nicely cooked chicken, along with one can each of cream of celery and cream of chicken. mix that all up and pour into a casserole dish. top with cheese. then top with puff pastry or unrolled crescent rolls (pictured is puff pastry). top with chopped nuts (pictured are cashews because i couldn't find any pecans in these stupid australian shops). bake at 200 degrees celsius-- i think that's about 400 fahrenheit. cook till the pastry looks nice and crispy.
